Chopped Kale Salad with Parmesan Cheese, Walnuts and Breadcrumbs

Kale is rich in antioxidants and is so good for you (especially when eaten raw). The key to this salad is finely chopping the kale leaves.
Ingredients
- 1 bunch kale
- 1/2 cup finely chopped walnuts (use a food processor or put in a plastic bag and hit with a spoon)
- 1/2 cup finely chopped seasoned croutons (use a food processor or put in a plastic bag and hit with a spoon)
- 1/2 cup finely shredded parmesan cheese (you can add more if you like)
- 1 tablespoon olive oil
- juice of 1 lemon
- salt to taste
Method
Step 1
Remove the kale from the stems, rinse thoroughly and pat dry with a paper towel. Chop the kale into very small pieces and place into large bowl.
Step 2
Add the parmesan cheese, walnuts and breadcrumbs and mix all together (to make this 'gluten free' you can skip adding the breadcrumbs).
Step 3
Add olive oil and lemon juice for the dressing. Taste to see if you need to add a sprinkle of salt (sometimes there is enough salt from the cheese). Enjoy!
