Easy Meatloaf Recipe

An easy and basic meatloaf recipe that’s tasty and moist. If you have leftovers you can make it into a sandwich the next day. I add sweet potato to it and it really gives it great flavor. You can add other veggies too (zucchini, garlic, green peppers, etc.). Seasoned breadcrumbs are a must for this recipe. Enjoy!

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 egg
  • 1/2 onion, grated
  • 1/2 sweet potato, grated
  • 1 cup milk
  • 1 cup Italian seasoned breadcrumbs
  • salt & pepper to taste
  • 1/4 cup ketchup
  • 1/2 teaspoon brown sugar
  • 1 teaspoon olive oil

Method

Step 1

Preheat your oven to 350 degrees F.

Step 2

In a large bowl, combine the meat, egg, onion, sweet potato, milk and breadcrumbs. Add in some of the ketchup, salt and pepper and olive oil. Mix together and place in a lightly greased 5x9 inch loaf pan.

Step 3

Sprinkle the brown sugar to the top of the meat and add some ketchup (I like to make a zigzag with it).

Step 4

Bake at 350 degrees F for around an hour and 10 minutes (check your meat at the 1 hour mark). Serve warm.
