This is a simple Spanakopita recipe that’s quick to make and tastes great. Spanakopita is a classic Greek favorite that is served as either an appetizer or you can make it your main meal. Since feta cheese is a bit salty, there is no need to add salt to this recipe!

Ingredients

  • 1 cup chopped spinach
  • 1/2 cup crumbled feta cheese
  • 4 tablespoons cottage cheese
  • phyllo dough
  • 1/2 stick butter melted
  • 2 tablespoons olive oil
  • 2 eggs

Method

Step 1

Mix 1 egg, spinach, cottage cheese, and feta cheese in a medium sized bowl.

Step 2

Spread out the roll of phyllo dough. Separate one sheet and brush on butter and olive oil mixture. Add a second sheet of phyllo dough and brush on mixture.

Step 3

Add 2 spoonfuls of spinach mixture to phyllo dough and begin to fold into a triangle.

Step 4

Place on baking sheet and brush egg on top of triangles. Bake on 350 degrees for 15 minutes. That's it!
