Stuffed Portobello Mushrooms

Portobello mushrooms are delicious and good for you. They are rich in disease-fighting phytochemicals and contain high levels of zinc which helps boost the body’s immune function.

This stuffed Portobello mushroom dish can be served alone or as a side. It is super easy to make and tastes absolutely delicious. You can modify this recipe by using different cheeses.

Ingredients

  • 2 large Portobello mushroom caps, rinsed and stems removed
  • 1/4 cup breadcrumbs (Italian style)
  • 1/4 package Boursin cheese with herbs
  • 1/2 cup shredded manchego cheese
  • 1 tablespoon olive oil

Method

Step 1

Preheat the oven to 400 degrees F. Prepare a baking pan by lightly greasing it.

Step 2

Stir the Boursin, manchego, breadcrumbs and olive oil together in a small bowl.

Step 3

Place mushrooms on the baking pan and stuff with the cheese mixture.

Step 4

Place in oven, and bake until the cheese melts, about 15 minutes. Serve hot.
